Malaysian Kopi Tarik

Kopi tarik is the pulled coffee of the Malaysian kopitiam — a strong brew pushed through a long cloth sock, sweetened with condensed milk, and then 'pulled': poured rapidly between two cups held at arm's length, the arcing stream aerating and cooling the coffee as it falls. The pull is the whole performance, and it is also the technique — the foam it builds caps the cup, and the air it folds in rounds the brew's rough edges.

Steps

  1. Set the coarse grounds in the kain and douse with boiling water

    The cloth sock filters the coarse grounds slowly, and the first douse swells the bed so the pours that follow run evenly instead of stalling.

  2. Pour, let it run, and repeat until the pot is full

    Repeated passes through the same bed build a strong, syrupy concentrate — the same grounds see the water several times, and each pass deepens the cup.

  3. Add the condensed milk to the hot brew

    The sweet milk meets the strong concentrate before the pull, so the aerating pour folds it through every part of the cup rather than leaving it to settle.

  4. Pull — pour rapidly between two cups held at arm's length

    The long arcing stream aerates the coffee, cools it to a drinkable temperature, and builds the signature foam that caps the kopitiam cup — the pull is what gives the drink its name.
